with avocado, mushrooms & goat cheese

A delicious and healthy breakfast with protein to start your day in a good way.

Preparation Time: 15 minutes

Serves: 2

Ingredients

  • 2 slices bread

  • 1 avocado - sliced

  • goats cheese or feta - crumbled

  • alfalfa

  • 8 Swiss/white mushrooms - sliced

  • butter

  • pinch of sea salt & freshly ground black pepper

Method

Heat 1 tsp of butter in a frying pan over medium heat. Add the mushrooms and a pinch of sea salt and black pepper and fry until golden.

Meanwhile:
Toast your bread and spread with butter. Add the avocado, mushrooms, goats cheese on the toast and garnish with alfalfa.
